If you love savory breakfasts as much as I do, then you’ll love this ! Andha Burji ( Indian spiced scrambled eggs ) . Enjoy this breakfast during the holidays or anytime and savor every minute with your families too … cheers !
Ingredients (serves 2)
⁃ 2 eggs
⁃ 1 tbsp butter or oil (I used avocado oil)
⁃ 1 green chili pepper chopped (optional )
⁃ Salt and pepper ( as per taste )
⁃ 1/2-1 onion finely diced
⁃ 1/2 handful cilantro finely chopped (add more if you like)
⁃ 1/2 tsp cumin powder
⁃ 1/2 tsp coriander powder
⁃ 1/4 tsp garam masala
⁃ 1/4 tsp turmeric powder
⁃ 1/4 red chili powder (optional)
Method
- Add oil to pan on med heat . Add onions – sauté for 3-4 minutes
- Add chili pepper and all other spices – (except cilantro ) season with salt and pepper – sauté for a few minutes
- In the mean time beat eggs in a separate bowl – season with salt and pepper – add eggs to the onion mixture and keep mixing to scramble eggs into the mixture until eggs are fully cooked.
- Add in cilantro and mix again . Serve hot with your fave morning beverage . Enjoy !
