Ingredients
- 1/4 cup oil
- 1-2 green chilies chopped
- 2 med onions chopped
- 1 kg frozen chopped frozen okra
- 1 med potato cut in half then thinly sliced
- 1 tsp salt
- 1/2 tbsp turmeric
- 1 tsp ginger paste
- 1 tbsp garlic paste
- 2-3 tbsp freshly chopped cilantro for garnish
Method
- Add oil to a pot on med heat.
- Once oil is hot, add frozen okra to the pot and saute until no longer frozen.
- Add salt and keep sautéing until no longer slimy or sticky.
- Once the slimyness is gone, add onions and mix well. Saute for about 5 minutes.
- Now add potatoes and stir to combine.
- Now add turmeric and mix.
- Make a well in the middle of the pot and add ginger and garlic paste in that space. Mix for a couple of minutes. Then mix the whole mixture together.
- Cover the pot with a lid and turn heat down to low. Let simmer until potatoes are fully cooked and soft. This could take up to 20 minutes. Keep checking and stirring gently.
- Enjoy with roti.
