Ahhh coming home from work to a warm bowl of lentil soup loaded with all the good stuff is the best feeling ever !!! This brown lentil soup is not only delicious but hearty and nutritious! And guess what !? I made it in the Instant pot which makes it appear at the table quicker !! add it to your rotation … it’s definitely part of ours !
Ingredients
- 1 medium onion chopped
- 1 tbsp olive oil
- 2 large carrots chopped
- 2 small celery chopped
- 2-3 cloves garlic minced
- 2 cups green or brown lentils rinsed & drained (uncooked)
- 3-4 tbsp tomato paste
- 1/2 tsp turmeric powder
- 2 tsp coriander powder
- 1 tsp paprika
- 1/2 tsp chili powder
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp salt
- Ground black pepper to taste
- 4-6 cups veggie stock or more
- 1 cup chopped kale
Ingredients
- In the Instant Pot, heat oil, add onion, garlic, carrot, celery, lentils, tomato paste, cumin, coriander, turmeric , chilli powder , paprika , oregano, salt, pepper, Add broth , enough to cover lentils.
- Close the lid, set pressure vent to Sealing and press Pressure Cook on High for 18 minutes.
- Natural Release after 6 minutes.
- Add chopped kale and mix .
- Close lid and keep warm for few minutes until kale wilted . Enjoy
