This is a roasted butternut squash ginger pear soup. A feel good healthy soup that I’ve paired it with some homemade focaccia bread.
Ingredients
⁃ 1 medium squash roasted ( you can purchase frozen cut squash as well )
⁃ 3 pears roasted
⁃ 1 small onion diced
⁃ 2 cloves garlic minced
⁃ 1 inch fresh ginger grated
⁃ 2 tbsp olive oil
⁃ 3-4 cups veg or chicken broth ( suited to your consistency )
⁃ 1 tsp sage powdered
⁃ 1 tsp rhyme
⁃ 1 tsp salt – adjust to taste
⁃ 1/4 tsp fresh ground pepper
⁃ 1 tsp paprika
Method
- Heat oil in a big pot on med heat
- Add onions and sauté until translucent, add garlic and Ginger and sauté few minutes
- Add all spices and salt and pepper , cook 1-2 minutes ( turn heat down )
- Add roasted squash and pear , coat all pieces with spices
- Add broth and let simmer , cover pot and leave it simmering on low for 10 minutes. Turn off heat
- Once slightly cooled , use immersion hand blender to make smooth soup – taste for salt and broth consistency
- Garnish as desired ( I used pumpkin seeds , hemp hearts and paprika). Enjoy!
