Chickpea greek salad ! A refreshing healthy lunch , dinner or a side. If you love greek salads then you’re going to love this too!
Ingredients
- 1 can chickpeas washed and drained
- Cherry tomatoes (halved lengthwise)
- Pitted kalamata olives (sliced)
- Cucumbers diced
- Red and orange pepper diced
- Green onion chopped
- 1/2 red onion sliced
- Crumbled feta cheese
Ingredients for the dressing
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- Juice from 1/2 a lemon
- 1/2 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- Salt and pepper as per your taste
*** whisk all above ingredients for the dressing together ***
Method
Mix all the veggies together. Add dressing ( see ingredients above) . Top with feta.
