Ingredients
- 2 tbsp olive oil
- 1 small onion diced
- 1 tsp garlic paste or 2 cloves garlic minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp red chili flakes or to taste
- Ground black pepper to taste
- 1/4 tsp turmeric
- 2 cans chickpeas ( drained and washed)
- 4 cups vegetable broth
- 2.5 cups fresh chopped kale
- 1/2 cup cooked orzo ( follow package instructions)
- Squeeze of lemon juice
Method
- Heat oil in a large pot on medium heat and sauté onions until translucent.
- Add spices, herbs and salt and sauté for a few minutes.
- Add chickpeas and mix well.
- Add broth and stir. Keep covered and simmer for 10 mins on low heat.
- After 10mins, add in cooked orzo, and chopped kale and simmer on low for 5-6 minutes.
- Taste now for salt and spice level, adjust to taste.
- Once done, squeeze lemon juice and turn heat off. Enjoy!
