Fun fact about me .. I’m not a big fan of yogurt or any soft textured food .. so I try to incorporate yogurt into my diet in more creative fun ways .. with a bit of a crunch or even better FROZEN! This frozen yogurt bark was a win for me and the kiddos .. you can definitely play around with more seasonal fruit option or by adding some granola !!
1.5 cups plain full-fat Greek yogurt, you can even use your fave flavoured yogurt
2 Tbsp maple syrup or honey
1 -1/2 tsp vanilla extract
1/3–1/2 cup fresh or frozen strawberries,sliced
1/3–1/2 cup fresh or frozen blueberries
2–3 Tbsp unsweetened coconut flakes
** you can use any fruit you like**
1. Line a rimmed baking sheet with parchment paper.
2. In a bowl, stir together yogurt, maple syrup and vanilla – mix well
3. Spread yogurt mixture evenly, about a 1/4 of an inch thick, onto the prepared baking sheet in rectangular shape. Scatter the fruits on the yogurt . Sprinkle with coconut flakes.
4. Place in the freezer for about 3 hours or more or until the yogurt is firm. break into pieces and serve.
