Itâs a sheet pan quick dinner that you can prep the night before .. and check out those vibrant colours that are sure to lure the kids too.
Ingredients
â 1 package gnocchiÂ
â 1 yellow zucchini – cut in half moons
â 1 green zucchini – cut in half moons
â 1/2 onion- cut in squares. 10-12 cherry tomatoes – halvedÂ
â 1 red pepper – cut in squaresÂ
â 1 lb whole mushrooms – quartered
â 1/4 cup olive oil
â A handful or more of pine nutsÂ
â 1 tbsp Italian seasoning
â Salt and pepperÂ
â 1 tsp dried parsleyÂ
â 2-3 tbsp balsamic vinegarÂ
Method
- Preheat oven to 400F
- Mix all ingredients together except balsamic vinegarÂ
- Once all veggies and gnocchi coated .. drizzle the balsamic – add more if you likeÂ
- Bake for 25-30 minutes . Enjoy !
