Panipuri , Phuchka , gol gappa or gupchup- whatever you want to call it .. is a type of snack that originated in the Indian subcontinent. It’s also a very popular street food all across India and consists of a round or ball-shaped, hollow puri, filled with a mixture of flavored water, tamarind chutney, chili, chaat masala, potato, onion and chickpeas. Here’s how I made it .. feel free to make it your own 🙂
Ingredients
⁃ 2 cans chickpeas- drained and washed
⁃ 1 onion finely diced
⁃ 2-3 boiled potatoes diced ( be careful not to boil potatoes to much or else they’ll turn to mush )
⁃ 1/2 handful cilantro chopped ( I add more 🙂
⁃ Few mint leaves chopped ( adds that extra freshness )
⁃ Salt and pepper to taste
⁃ 2 tbsp Chaat masala as per your taste ( found at any Indian grocery stores)
⁃ 1 tbsp lemon juice
⁃ 1/2 tsp Chili powder if desired
⁃ 1-2 boxes of puffed puris
Chutneys
1. Yogurt based
⁃ mix 1/2 cup Yogurt with water for runny consistency – add chaat masala according to taste
2. Tamarind
– tamarind chutney- pre made found in Indian store ) I prefer the Ali brand
Method
1. Mix all the ingredients in a big bowl(not the chutney ingredients)
2. Serve by gently making a hole in the center of the puffed puris
3. Spoon mixtures into the puri and drizzle with tamarind chutney , then yogurt chutney and sprinkle with chaat masala
