Indian inspired shepherds pie ! My kids said it tasted like samosas ! I would call that a win ! If you need a break from the traditional Shepherd’s pie then give this recipe a try.
Ingredients
⁃1/2 lb ground beef
⁃1 tbsp olive oil
⁃1-1/2 tsp salt
⁃1 tbsp garlic paste
⁃1 tbsp ginger paste
⁃1 tbsp cumin powder
⁃1/4 tsp turmeric
⁃1/2 cup mixed frozen vegetables
⁃1 small onion finely diced
⁃1 tbsp coriander powder
⁃1 tsp paprika
⁃1 tsp red chilli powder
⁃1 tsp Garam masala
⁃1 -2 tsp lemon juice.
⁃1/2 cup chopped cilantro
⁃1-2 chopped green chillies ( omit if you don’t want spicy )
For the mashed potatoes
⁃4-5 potatoes boiled and mashed
⁃ 1 tbsp butter
⁃ 1 tsp chili powder
⁃ 1/4 tsp turmeric
⁃ 1 tsp paprika
⁃ 1 tbsp lemon juice
⁃ 1 tsp garlic powder
⁃ 1 tsp onion powder
Method
- Preheat oven to 350F
- Heat a large non stick skillet , add oil- brown ground beef – make sure all water is evaporated
- Add onion , and all spices and pastes
- Let simmer covered on low for 5 minutes.
- Add mixed vegetables, cilantro and lemon juice and mix well . Make sure beef mixture is dry . Sprinkle garam masala and mix well.
- For the mashed potato topping – mix all ingredients listed with potatoes and mix very well.
- Place cooked beef mixture in an oven safe casserole dish .
- Spread mashed potatoes over top , sprinkle some cheese and place in the oven for 20 minutes. Enjoy !
