Indian Curried corn ! If you’ve had this dish before then I don’t have to tell you how good it is ! This is my absolute go to side dish with my East African style bbq like mishkaki or ribs. It was definitely a staple in our house growing up. It is ridiculously easy to make and again you know me, very few ingredients !
Ingredients for step 1:
– 1 package frozen corn ( small bag )
– Water enough to cover the corn
– 1-2 tsp salt
– 1/2 tsp turmeric
Ingredients for step 2:
– 1 tbsp veg oil
-1 tsp black mustard seeds
– 2-3 curry leaves ( can omit if you don’t have it handy )
– 1 tsp salt (adjust to taste )
– 1/2 tsp turmeric
– 1 tsp red chili powder ( optional )
– 1/2 garlic paste
– 3 healing tbsp tomato paste
– 1 -2 tsp lemon juice
– Handful of fresh cilantro chopped
Method
Step 1
⁃ Boil corn in water with salt and turmeric just for 5 minutes then drain- do not wash
Step 2
1. Heat oil in a pot on medium heat
2. Add mustard seeds to the oil ( it will splutter so be careful ) stir for few seconds – don’t let it burn
3. Turn heat down to medium low and add curry leaves, tomato paste , garlic , salt , turmeric and chili powder ( in that order ) mix well on med low heat until deep in color and oil starts separating
4. Add boiled corn and mix well
5. Turn heat off – stir in cilantro and lemon juice . Mix again – enjoy !!
