Ingredients
- 1lb chicken thighs or 1 breast cut into small pieces -seasoned with salt and pepper
- 3 tbsp olive oil
- 1.5 cups brown rice
- 1 jalapeño seeded and chopped
- 2 cups frozen corn
- 1 med onion diced
- 2 cups chicken broth
- 1/2 tsp paprika
- 1 can pinto or white canellini beans
- 2-3 green onions diced
- Salt and pepper to taste
- Balsamic vinegar for drizzling
- Fresh chopped cilantro for garnish ( optional)
Method
- Heat oil in a large pan on med heat.
- Add seasoned chicken, and cook halfway through.
- Add onions and saute for a few minutes. Now add paprika and chopped jalapeño , mix well and saute for 2 mins.
- Add uncooked brown rice and mix until well incorporated.
- Add chicken broth. Let the mixture come to a boil, then cover with a lid and let simmer for 15-20 mins or until rice is 90% cooked- there should still be liquid left in the pan.
- Now add beans, corn and green onions, mix well and cover again and let simmer for 10 mins.
- Once rice is fully cooked, add in fresh cilantro then dish out onto a plate and drizzle your fav balsamic vinegar on top. Also best enjoyed with corn chips!
