Is it just me or do you also struggle with coming up with a side dish ? Problem solved ! This is my all time go to side dish that pairs well with any type of meal 🙂 Roasted carrots ! Perfect for fall, thanksgiving or any season.
Ingredients
1 lb carrots cut diagonally into pieces
1-2 tbsp olive oil
1/2 tsp saltÂ
1/4 tsp pepperÂ
1 tsp garlic powderÂ
1 tsp dried parsleyÂ
1 tsp Italian seasoning or oregano ( whatever you have handy )
1 tsp paprika
1 tsp red chili powder (omit if you don’t want spicy )
Method
- Toss all the ingredients together in a big bowl . Mix well
- Spread on a cookie sheet with parchment paper
- Roast at preheated 400F oven for 20 minutes – check for desired tenseness 🙂
