Ingredients
- 4-5 rotli ( chapati, maani, roti) cut into bite sized pieces
- 1 tbsp oil
- 1 tsp cumin seeds
- 1/2 tsp black mustard seeds
- 2-3 cloves garlic chopped
- 1/2 tsp ginger paste
- 1-2 green chilies chopped ( adjust according to taste)
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp red chili powder ( optional)
- 1/4 tsp turmeric powder
- 1 tsp salt or to taste
- 2 heaping tbsp tomato paste
- 3-4 tbsp plain yogurt
- 2 tbsp freshly chopped cilantro + more for garnish
- 1 tbsp hot water or as needed
Method
- Heat oil in a pot on medium heat.
- Once hot, add cumin seeds and mustard seeds and let it splutter for a minute- making sure not to burn.
- Add garlic and sauté for 1 minute. Do not let it burn.
- Add ginger paste, green chilies, all the powdered spices and salt. Sauté for a few minutes.
- Add tomato paste and mix well, cook for another 2 minutes.
- Now add yogurt and mix well – all spices and yogurt should be mixed.
- Add chopped cilantro and 1 tbsp water.
- Turn down heat to med-low, add rotli pieces and mix very well.
- Add an additional tbsp or so of water if it seems dry and cook on low for a few minutes. ( consistency depends on taste, it shouldn’t be too mushy or too hard).
- Dish out onto a plate and garnish with fresh cilantro. Enjoy!
OPTIONAL INGREDIENTS
- Small diced onion ( add before garlic and sauté until translucent)
- 1 small tomato diced ( to substitute tomato paste)
- 1 tbsp sesame seeds ( for garnish)
